Fresh squeezed orange juice, Sparkling White Grape Juice, and Mimosas for the refreshments. People will love the brunch you host on Palm Sunday... How to Make The Perfect 5-Minute Omelet
Ingredients
1. Gather the ingredients.
2 eggs
1 tablespoon clarified butter (or whole butter)
2 tablespoons whole milk
1/8 teaspoon salt, to taste
1/8 teaspoon ground black pepper (or white pepper ), to taste
2 to 3 small mushrooms, sliced and sauteed (or filling of choice), optional
1/8 cup grated cheese, optional
3 tablespoons fresh herbs, chopped (reserve some for garnish), optional
2. In a glass mixing bowl, crack the eggs and beat them until they turn a pale yellow color.
Heat a heavy-bottomed 6- to 10-inch nonstick sauté pan over medium-low heat. Add the butter and let it melt.
4. Add the milk to the eggs and season to taste with salt and pepper. Then, grab your whisk and whisk like crazy—you're going to want to work up a sweat here. If you're not up for that, use an electric beater or stand mixer with the whisk attachment. Whatever device you use, the goal is to beat as much air as possible into the eggs.
5. When the butter in the pan is hot enough to make a drop of water hiss, pour in the eggs. Don't stir. Let the eggs cook for up to 1 minute or until the bottom starts to set.
6. With a heat-resistant rubber spatula, gently push one edge of the egg into the center of the pan, while tilting the pan to allow the still liquid egg to flow in underneath. Repeat with the other edges, until there's no liquid left.
7. Your eggs should now resemble a bright yellow pancake, which should easily slide around on the nonstick surface. If it sticks at all, loosen it with your spatula.
8. Gently flip the omelet over, using your spatula to ease it over if necessary. Cook for another few seconds, or until there is no uncooked egg left.
Spinach Frittata With Bacon and Cheddar

A frittata is round, deep, savory custard that you make for a large group of people. This frittata recipe features spinach, bacon and cheddar cheese. It's perfect for holiday brunches or other special occasions—even dinner.
For this frittata recipe, we cook everything in a cast-iron skillet because it can be heated on the stovetop and then transferred to the oven where the cooking is finished. For this eight-egg frittata, a 10-inch skillet should be about right. But any other large skillet that is safe for both stovetop and oven should be fine. (See tip below.)
Ingredients
8 slices bacon
1/2 large onion, diced
1/2 pound fresh spinach, rinsed, dried, and torn into roughly 1-inch pieces
8 large eggs
1/2 cup whole milk
Kosher salt, to taste
1 cup grated cheddar cheese
Gather the ingredients.
Preheat oven to 450 F.
Cook the bacon in a cast-iron skillet over medium-low heat. When bacon is crispy, remove it from the pan, drain on paper towels, and set aside.
When it's cool, roughly chop it into 1/4-inch pieces—or just crumble it up.
Reserve about 2 tablespoons of bacon fat, then add diced onion and sauté for 2 to 3 minutes or until it's slightly translucent.
Turn off the heat under the pan, then add the spinach pieces and stir with a wooden spoon for a minute until the leaves are fully wilted.
In a glass mixing bowl, thoroughly beat the eggs until nice and frothy. Add the milk and stir until combined. Season to taste with kosher salt.
While the egg mixture is still frothy, pour it into the skillet, and sprinkle the bacon pieces in as well. Give everything a stir to distribute the ingredients evenly. This is the last time you're going to stir, so get it all out of your system now.
Turn the heat under the skillet back on to about medium and cook for about 5 minutes or until the egg begins to set. No stirring.
Add the grated cheese, sprinkling it evenly across the top, and then transfer the skillet to the oven. Bake 10 to 15 minutes or until the eggs are fully cooked.
Tips
The reason we cook the veggies before adding them to the egg mixture is so that the water in the veggies has a chance to cook out. Adding raw vegetables to your frittata can cause it to turn out soupy. As for cooking the veggies in the same pan as we cook the frittata, that just makes things simpler, and it's why the skillet you use needs to be safe for the stovetop and the oven.
If you don't have an oven-safe skillet, you can pour the egg mixture into a baking dish and add the cooked onions, spinach, and bacon as well as the grated cheese, and just bake the frittata in that dish. If you do it this way, add 5 to 10 minutes to the baking time and check to make sure the egg is fully cooked before serving.
Banana Nut Muffins

BANANA NUT MUFFINS!! Worth shouting about, because I took my all-time favorite Easy Banana Bread and turned it into the best Banana Nut Muffins. Prepare to ravenously consume several of these soft, fluffy muffins straight from the oven. They’re so good.
Banana Nut Muffins
This recipe is based off of my popular Banana Bread. I made a few small tweaks to turn them into muffins and I am beyond thrilled with how great they came out. Here’s what makes these the best:
Bananas – This banana bread is loaded with bananas – two whole cups! I use 3-4 overripe bananas to make this bread sweet, moist, and undeniably banana-flavored.
Brown Sugar – The only sugar used in these muffins is brown sugar. It is in the batter and it gets sprinkled on top before baking. The brown sugar gives the bread a deeper flavor and almost caramel-like sweetness. Plus, brown sugar and bananas are a fantastic flavor combo.
Topping – The top of each muffin is adorned with a sprinkling of brown sugar and chopped walnuts. This adds a delicate sweet and crunchy layer right on top of each muffin.
Tips For Making Banana Nut Muffins:
The more ripe your bananas are, the sweeter they’ll be. Make sure your bananas are speckled with brown spots, as this ensures they will mash easily and lend lots of natural sweetness and banana flavor the muffins.
Your brown sugar should be fresh and soft. Since this is a key ingredient (used in both the topping and the batter), make sure it is fresh and moist.
Use your favorite nuts. I chose chopped walnuts for this version, but chopped pecans, hazelnut or macadamia nuts would also be delicious. Feel free to even use a combination of nuts.
Top these muffins with salted butter, honey butter or maple butter to make them extra tasty.
Good Old Fashioned Pancakes

Step 1 In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Step 2 Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
PINEAPPLE STRAWBERRY MIMOSA
This Pineapple Strawberry Mimosa is crisp and refreshing and perfect for brunch! It’s a stand-by classic with a sweet, fun twist.
MIMOSA INGREDIENTS
You just need a few ingredients to make this refreshing cocktail, so of course, quality ingredients matter.
Pineapple Juice – For a high quality brand, Lakewood Pure Pineapple Juice tops the list. Pure pressed juice, not from concentrate. Concentrates and blends tend to contain more sugar.
Strawberries – fresh berries from a local stand are going to be the best of the best. If you don’t have a stand new you, grocery store berries would be the next choice. If it’s not strawberry season, you can try frozen strawberries, just let them thaw first.
WHAT CHAMPAGNE IS BEST FOR A MIMOSA?
Choosing your champagne is up to you as well and there are so many different kinds to choose from. You can go the sparkling wine route such as Prosecco or stick with a Dry Brut Champagne even a sweet Spumanti would be great. Pick whichever you would prefer to drink by itself. No wrong choices here!
HOW TO MAKE A PINEAPPLE STRAWBERRY MIMOSA
The strength of your mimosa is completely personal. Some like half and half, others like more juice than champagne and some like just a small amount of juice. I’m more of the last option kinda gal. I like to taste the champagne and not over power and it with juice. So in my recipe I did not put measurements so you can make each drink specifically for the person drinking it.
Muddle the strawberries: Drop a couple of small strawberries in the champagne flute (remove the stems first). Press the fruit against the side of the glass using a muddler or just the back of a spoon. If you don’t like chunks in your drink then I suggest pureeing the strawberries in a blender or food processor and straining out the seeds. It’ll take a bit longer but it would be worth it for the fresh strawberry taste.
Add champagne: Next add your desired amount of champagne to the glass, as little or as much as you like.
Add juice: Top off your Mimosa with pineapple juice and garnish with a small slice of pineapple or a fresh strawberry.
CAN YOU MAKE MIMOSAS AHEAD OF TIME?
You can, but I recommend not making them more than an hour ahead of you will lose some of the carbonation from the champagne.
